Please use the following steps to change the color of Menu bar:
Go to Dashboard => Appearance => Customize => Colours => And change the Menu Background => Then save it.
For “&” symbol placed behind the Word “Pure Simple” is a image, so you can use the photo editor to change it.
And Regarding the different header styled you can follow the following steps:
Go to Dashboard => Appearance => Customize => Basic Setting => And you can see that Display Primary Menu On and change it => Then save it.
And for other you get the style in same Place
